The latest Insider Series brought local CTAs to the newly opened Sabine Café & Bar in downtown Bellevue. Representatives from Bellevue hotels and attractions, the meetings and conventions industry, Visit Bellevue and the City of Bellevue gathered to experience the restaurant, meet its team and learn what guests can expect when they visit.
An Inside Look at Sabine Bellevue
Located on the ground floor of The Eight, Sabine’s Bellevue location brings the café and bar concept from Seattle’s Ballard neighborhood to downtown Bellevue. Sabine Bellevue is a café, bakery and bar serving Mediterranean-inspired breakfast, lunch and small-plate mezze. Its seasonal menu highlights organic ingredients and products from local farms, foragers and producers, complemented by espresso drinks, cocktails and a weekday happy hour. The Bellevue location offers walk-in counter service in a bright, welcoming setting designed for everything from morning coffee to casual gatherings.
During the Insider Series event, CTAs learned more about Sabine’s concept and approach while sampling selections from its menu. They also had an opportunity to speak directly with the Sabine team, ask questions and discuss ways the restaurant could work with Bellevue’s hotels, meeting planners and tourism partners.

Attendance is generally limited to 10 Certified Tourism Ambassadors, creating an intimate setting where participants can engage directly with the featured business. By experiencing what’s new in Bellevue firsthand, CTAs can make informed recommendations that connect visitors with local businesses.
